Roasted Chili Cheese Potato Wedges

Do you miss your heaping portions of chili cheese fries sometimes? If so, you're in luck-- here's a diabetes-friendly substitute. You might even like it better!


1 package of veggie crumbles (or use 12 oz. of browned ground turkey)

1 8 oz. can of tomato sauce

1/2 diced onion

1/2 diced bell pepper

1/2 tsp chili powder (depending on how hot you like it)

1 tsp. tomato sauce

1 tbsp. barbecue sauce

1/2 tsp. ground marjoram

1/4 tsp. ground cumin

1/4 tsp. garlic powder

1/4 tsp. salt

1/4 tsp. pepper

4 baking potatoes

1/4 tsp. more of chili powder

1/4 tsp. paprika

2 tsp. olive oil

Salt and pepper to taste

4 oz low-fat cheddar cheese, shredded

4 tbsp. fat free sour cream


Prepare the veggie crumbles according to package, or brown your ground turkey in a skillet and drain it.

Return the skillet to the heat. Spray it with nonstick cooking spray. Throw in the onions and peppers and sauté them, stirring frequently, for about 3 or 4 minutes.
